Among espresso lovers, getting a good crema on their espresso has become somewhat of an obsession.
The crema is the hazelnut colour foamy bit that sits on top of the coffee, and is often regarded as the mark of a good espresso. For espresso experts the crema is the key to diagnosing the quality and taste of the espresso coffee and if it was brewed quickly or slowly as well as the quality of the bean used.
In your pursuit for the perfect espresso crema:
- Use a pump machine over steam as it won’t produce enough pressure.
- Use fresh coffee and if possible grind your own too just before use.
- Use just a little more coffee then suggested if you’re struggling with that crema.
- Use a preheated small espresso cup, if the cup is too big you will get less crema.
Finally, if you can find an espresso cup with a small raised dimple in the bottom, rumour has it that this creates a longer lasting crema when it is being poured.
